Bangin' Banana Bread (Serves 12)

1/2 cup white sugar
2 eggs, at room temperature
2 1/2 cups pureed ripe bananas
1 1/4 teaspoons baking soda
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup coarsely chopped macadamia nuts Method- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- In a mixing bowl, beat the butter and sugar together with an electric mixer until thoroughly blended. Beat in the eggs, one at a time, and add the bananas, baking soda, baking powder, salt, and vanilla extract. Stir in the flour by hand until barely combined, and gently fold the macadamia nuts into the batter.
- Pour the batter into the prepared pan, and bake on the oven's middle shelf until a toothpick or cake tester inserted in the middle of the loaf comes out clean, 60 to 65 minutes.
- Remove from oven, and let the loaf rest for 10 minutes before turning out from the pan.

Carrot-Orange Bars (Serves 2 dozen)

2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
3/4 cup butter, softened
1/3 cup orange juice
1 teaspoon vanilla extract
1 egg
1/2 cup white sugar
2 teaspoons orange zest
1/2 cup flaked coconut
1 cup mashed cooked carrots
1/2 cup orange juice
1 teaspoon orange zest
1 1/2 cups confectioners' sugar Method- Preheat oven to 350 degrees F (175 degrees C). Grease an 11x7 inch pan.
- In a medium bowl, cream the butter, sugar, egg and vanilla until well blended. Sift together the flour, baking powder, salt and nutmeg and slowly add to mixture, alternating with 1/3 cup orange juice and 2 teaspoons of rind. Stir in the coconut and carrots. Pour batter into baking pan.
- Bake for about 35 minutes in the preheated oven. Let cool on wire racks.
- Combine 1/2 cup of orange juice, 1 teaspoon of orange rind and 1 1/2 cups confectioners' sugar. Warm slightly and pour over cooled bars.

Chocolate Chip Orange Zucchini Bread (Serves 12)

1 cup vegetable oil
2 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts
1 cup semisweet chocolate chips
1 tablespoon orange zest
3 cups all-purpose flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
1 teaspoon ground nutmeg Method- Sift together flour, baking powder, soda, salt, and spices.
- In a large bowl, beat eggs until light and fluffy. Add sugar, and continue beating until well blended. Stir in oil, vanilla, zucchini, nuts, chocolate chips, and orange rind. Blend in sifted ingredients. Turn batter into two greased 9 x 5 inch loaf pans.
- Bake at 350 degrees F (175 degrees C) for 50 minutes, or until bread tests done.
- Remove loaves from pans, and cool. Chill before slicing.

My Kid's Favorite Zucchini Bread (Serves 1 loaf)
courtesy of Lauren W. Prep time: 15 minutes, Bake: 55 minutes oven 350deg. Ingredients1 1/2 cups organic flour
1 teaspoon organic cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon organic ground nutmeg
1 cup organic sugar
1 cup finely shredded, unpeeled organic zucchini (I use the whole zucchini not matter the size)
1/4 cup olive oil (or whatever you prefer)
1 egg
**optional 1/2 cup of walnuts or pecans Method- Prep bread loaf pan with "grease" I like to use one pat of organic butter
- In a medium bowl combine flour, cinnamon, baking soda, baking powder, salt and nutmeg; give it a mix with a fork & set aside.
- In another bowl mix sugar, shredded zucchini, oil and egg.
- Add the dry mix to the wet, just until moistened.
- Bake at 350* for 55 minutes on center rack.
- Cool completely and enjoy! Use foil to store or Ziploc to freeze.

Nutty Yam Bake (Serves 10)

1 c. brown sugar
1/4 c. butter
1 tsp. cinnamon
1/2 tsp. ground allspice
1/4 tsp. nutmeg
2 c. milk
2 eggs On Top: 1/2 c. flour
1/2 c. brown sugar
1/4 c. butter
1/2 c. walnuts, chopped
1/2 tsp. cinnamon Method- Cook potatoes in boiling water until tender
- Drain well
- Mash while hot
- Add sugar, butter, spices and mix well
- Beat in eggs and milk
- Put in three quart casserole dish
- Combine flour, brown sugar, butter, walnuts and cinnamon until crumbly
- Sprinkle over potato mixture
- Bake at 375 degrees for 35 to 40 minutes
