Aunt Holly's Banana Bread (Serves 1 loaf)

Ingredients
3 to 4 ripe organic bananas
1/4 cup melted organic butter
1 cup organic sugar
1 1/2 cups organic flour
1/4 teaspoon salt
1 organic egg, beaten
1 teaspoon baking soda
Organic Chocolate chips (as many as you want!)

Method
  1. Preheat oven to 350°F
  2. Mash the bananas in a bowl
  3. Add all the remaining ingredients and mix well with a wooden spoon
  4. Bake in a buttered loaf pan until a toothpick stuck into the bread comes out clean, 55 to 60 minutes.
  5. Slice and serve.

Blueberry Waffles with Quick Blueberry Sauce (Serves 6)

Pancake Ingredients
3 egg yolks, beaten
1 2/3 cups milk
2 cups all-purpose flour
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1/4 cup melted butter
3 egg whites, stiffly beaten
2/3 cup blueberries

Sauce
1 1/2 cups blueberries
3 tablespoons honey
1/2 cup orange juice
1 tablespoon cornstarch

Method
  1. In a medium bowl, whisk together egg yolks and milk. Stir in flour, baking powder and salt. Stir in butter, and set mixture aside for about 30 minutes.
  2. Preheat a lightly greased waffle iron.
  3. Fold egg whites and 2/3 cup blueberries into the mixture. Scoop portions of the mixture into the prepared waffle iron, and cook until golden brown.
  4. To prepare the sauce, in a medium saucepan over medium heat, mix 1 1/2 cups blueberries, honey and 1/4 cup orange juice. Bring to a boil. Mix remaining orange juice and cornstarch in a small bowl, and stir into the blueberry mixture. Stir constantly until thickened. Serve warm over waffles.

Cinnamon-Honey Grapefruit (Serves 2)

Mmm... now this is a delicious, simple breakfast treat that anyone can make! Try making it the night before for a worry free morning.

Ingredients
1 medium grapefruit
2 teaspoons honey
1 dash ground cinnamon

Method
  1. Cut each grapefruit in half. With a sharp knife, cut around each section to loosen fruit. Place cut side up in a baking pan.
  2. Drizzle each half with 1 teaspoon honey; sprinkle with cinnamon. Broil 4 in. from heat for 2-3 minutes or until bubbly. Serve warm.

Easy Morning Glory Muffins (Serves 12)

Ingredients
2 cups all-purpose flour
1 1/4 cups white sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/4 teaspoon salt
2 cups shredded carrots
1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup unsweetened flaked coconut
1 apple - peeled, cored and shredded
3 eggs
1 cup vegetable oil
2 teaspoons vanilla extract

Method
  1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
  2. In a large bowl, mix together flour, sugar, baking soda, cinnamon, and salt. Stir in the carrot, raisins, nuts, coconut, and apple.
  3. In a separate bowl, beat together eggs, oil, and vanilla. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups.
  4. Bake in preheated oven for 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Organic Butternut Squash Pancakes (Serves 6)

Ingredients
1 small organic butternut squash
1 organic egg
1 organic egg white
1/2 cup of organic milk
2 cups organic whole wheat pastry flour
2 teaspoons of baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 tablespoon vegetable oil

Method
  1. Preheat oven 350º F.
  2. Cut squash in half, and remove seeds with a spoon. Bake squash in a roasting pan until tender about 40 minutes. 20 minutes into baking the squash, add 1cup of water to the roasting pan (this will keep the squash from drying out).
  3. Scoop out squash with a spoon and cool. Mash squash with a fork.
  4. In a bowl, combine the wet ingredients: squash, eggs and milk.
  5. In another bowl combine the dry ingredients: flour, baking powder, cinnamon and cloves.
  6. Add the dry ingredients to the wet ingredients and mix well. Let stand 20 minutes.
  7. Heat the oil to medium high heat in a nonstick pan.
  8. Pour or ladle batter into the pan and cook 3 minutes per side.
  9. Serve with whipped cream, yogurt, honey, maple syrup or butter.

Zucchini Frittata (Serves 2)

We suggest adding more veggies and switchin' up the cheese!

Ingredients
1/2 cup chopped onion
1 cup shredded zucchini
1 teaspoon cooking oil
3 eggs, beaten
1/4 teaspoon salt
1 cup shredded Swiss cheese


Method
  1. In an 8-in. ovenproof skillet over medium heat, saute onion and zucchini in oil for 2-3 minutes. Pour eggs over top; sprinkle with salt.
  2. Cook until almost set, 6-7 minutes.
  3. Sprinkle with cheese.
  4. Bake at 350 degrees F for 4-5 minutes or until the cheese is melted.
